Ah, Chicken Kiev. I haven't made it in ages. I really like the idea of cutting the chicken breasts in half, and then if my boys have seconds they're really only having one chicken breast! I'll definitely make this one!

I love when other people have dirty little prepared food secrets--you know how I am with ramen. And mom and dad would probably have been reported to child services if anyone knew how much box mac and cheese they let me eat when I was little. Sometimes I still get a hankering for the blue box, but I never actually make it.

So, I love to hear that my veggie-growing, whole-food-loving sister buys chicken kievs from the grocery store...frozen! And I was going to make fun of you for loving a chicken dish that shows up on bad banquet hall menus--until you made these for us. They were delicious! Simple, easy, crisp-outside-tender-inside, and topped with shalloty (yup that's a word) goodness and a fresh hit of parsley.

This reminds me of the kind of meals mom used to cook for us, back when we didn't eat red meat and she worked all the time. Lightly breaded chicken breast with a sauce, plus a few sides and you've got a solid, satisfying meal...though possibily in need of a little fourth-dish kick in the butt.

I will definitely be adding this to my weeknight repertoire when I get enough $$ to buy chicken :)

These days even the organic chicken breasts I buy are pretty mammoth, so splitting a chicken breast to make 2 cutlets reduces cooking time and saves calories and $$$. I like that. This recipe is neat, tidy, uncomplicated--perfect for weeknight dinner.
