Grace Bender's Pecan Balls
Serves: Makes 5 dozen
  • 2 sticks (8 ounces) salted butter (softened)
  • ½ cup granulated sugar
  • 2 cups (about 8 ounces) pecans, ground very fine
  • 2 cups cake flour
  • 1 teaspoon vanilla extract
  • 1 cup confectioner’s sugar
  1. Adjust oven racks to lower-middle and upper positions and heat oven to 300 degrees.
  2. Mix all ingredients in a medium bowl. Divide dough into 2-teaspoon portions, rolling each into a ball, and arrange on 2 large cookie sheets.
  3. Bake cookies until golden brown and fragrant, 40 to 45 minutes. Cool completely and then roll each cookie in confectioner’s sugar to coat completely. Can be stored in a tin for a couple of weeks or frozen for a month.
