Irish Soda Bread

Ingredients
  • 3½ cups bleached all-purpose flour
  • 1½ teaspoons salt
  • 1½ teaspoons sugar
  • ¾ teaspoon baking soda
  • 1½ cups buttermilk
Instructions
  1. Adjust oven rack to lower-middle position and heat oven to 450 degrees. Mix flour, salt, sugar, and baking soda in a large, wide bowl for easy mixing. Add buttermilk and stir with a fork until dough resembles small tatters of cloth.
  2. Using hands, knead dough in bowl to quickly to form a rough 8-inch ball. Place dough on a small baking pan, slashing top with a cross or X. Bake until bread starts to turn golden, about 10 minutes. Reduce oven temperature to 400 degrees; continue to bake until bread is crisp and golden brown, about 35 minutes longer. Transfer to a wire rack, cool slightly.
