Serves 6
Lemon-lime soda is traditional in this drink, but we prefer less sweet tonic water (and we adore Q!).
3 cups ice cubes
4 large mint sprigs
1/3 cucumber, halved lengthwise and sliced thin
1/2 orange, sliced thin (or 1 pint strawberries, hulled and sliced thin)
1 1/2 cups Pimms
1 bottle (750 ml) tonic (or 3 cups lemon-lime soda such as 7UP or Sprite)
Place ice, mint, cucumber, and orange (or strawberries) in a large pitcher. Using a wooden spoon, lightly beat ingredients over ice to release flavors. Add Pimms and then tonic. Stir and serve.

I love Pimm’s! I had never heard of it in the US, but here in England everyone enjoys Pimm’s O’Clock! Your recipe looks delicious and I can’t wait to try it!
Looks beautiful; reminiscent of a Sangria but I admit, have never put cucumber in Sangria! I’ve heard of Pimm’s, have seen a couple of recipes appear lately for cocktails, but have yet to find it in a store near me so I’ll just have to appreciate from afar I guess.
Barb, Pimms is very much a British Sangria. We make ours with ginger beer and sprite, oranges, lemons, limes, mint, and lots of ice. No cucumber in the Bracegirdle house, James won’t abide it! *sigh*
