One Recipe—Four Slaws (from Pam Anderson’s The Perfect Recipe for Having People Over)
Salsa Verde version pictured
Serves 6
4 cups (about 12 ounces) coleslaw mix
1 medium carrot, coarsely grated
1/2 medium red or yellow bell pepper (or 1/4 each)
1/4 sweet white onion or 4 medium scallions, sliced thin
1/4 cup chopped fresh cilantro (except for American-style slaw)
1 dressing (your choice, see below)
Salt and freshly ground black pepper
Mix coleslaw mix, carrots, peppers, scallions, and cilantro in a large bowl. Add dressing of choice and a generous sprinkling of salt and pepper. Toss, let stand a few minutes for flavors to bend, if there’s time, and serve.
Soy-Ginger Dressing
For this slaw, add 1/2 cup chopped honey-roasted peanuts, if you like.
1/4 cup rice wine vinegar
1/4 cup soy sauce
2 tablespoons sugar
2 tablespoons water
1 teaspoon ground ginger
1/2 teaspoon hot red pepper flakes
Whisk ingredients together until sugar dissolves
Classic American Dressing
1/2 teaspoon celery seeds
9 tablespoons (1/2 cup plus 1 tablespoon) mayonnaise
2 tablespoons rice wine vinegar
Mix celery seeds, mayonnaise, and rice wine vinegar in a small bowl.
Orange Cumin Dressing
1/4 cup orange juice concentrate
1/4 cup rice wine vinegar
1 teaspoon ground cumin
1/4 cup olive oil
Whisk concentrate, vinegar, and cumin together in a 2-cup Pyrex measuring cup. Slowly whisk in olive oil
Salsa Verde Dressing
3/4 cup jarred salsa verde
1/4 cup juice from 2 limes
1/4 cup rice wine vinegar
1/4 cup olive oil
Whisk salsa, lime juice and vinegar together in a 2-cup Pyrex measuring cup. Slowly whisk in olive oil.

I always go with yogurt and make an American/ Greek twist but I love the Soy Ginger and Orange Cumin ones you have listed. YUM!

I make one very similar to the soy ginger version that you mentioned here. I like to cook my cabbage slightly beforehand though. (I know, I know, it’s not really slaw that way)

Funny, I blogged about coleslaw today, too! Mine uses cider vinegar and a grated Granny Smith apple. Gotta love a recipe with so many possibilities.

Love all the different versions! I love slaw. Back home, one of my favorite burger joints for late night noshes served their burger with a generous helping of slaw inside the sandwich. I still crave that to this day.
