We had a great New Year’s Day lunch with our family this afternoon, straight from the Southern tradition—fried chicken, black eyed peas, sweet potato puree, one of Mom’s famous salads and fresh corn muffins. It was sinfully delicious. I don’t think I’ll eat again…until I poke my nose into the fridge to nosh on some leftover fried chicken this evening.
Lunch for thirteen is pretty hard to pull off, but there are ways to make things easier. Mom fried the chicken in a roasting pan. The coffee pot was set up and ready to go. And instead of trying to time everything perfectly and sit everyone down at one time and one table, we just set up a self-serve buffet and let people sit anywhere. It made things so much more manageable. Casual may not be for everyone, but it sure works for us. Especially when everyone pitches in to help serve up dessert while others do the dishes!
Our Aunt brought dessert. Beignets with truffles. Yup, that’s right, just when you thought our lunch couldn’t get any more indulgent, we had beignets covered in powdered sugar with truffles inside.
She got the beignet recipe from The Food Network.
…and the truffles from this place called Chocopologie (how cute is that?), but any good quality chocolate will do…
The key is to freeze the chocolate before you cover it in dough and fry it.
