Makes about 30 sandwiches, serving 20
1/2 cup vegetable oil
5 medium-large onions, chopped
5 pounds ground beef or turkey
1 tablespoon garlic powder
4 cups (1 quart) ketchup
2/3 cup soy sauce
1 1/4 cups Dijon mustard
2/3 cup brown sugar
1/4 cup Worcestershire sauce
1 tablespoon red pepper sauce
Heat oil over medium-high heat in a large (2 gallon capacity) roasting pan or disposable roasting pan over 2 burners. Add onions; cook until tender, 5 to 7 minutes. Add ground meat, stirring frequently to break up large clumps; cook until no longer pink and liquid evaporates. Drain fat, if necessary.
Mix remaining ingredients and stir them into the cooked meat. Continue to cook, stirring frequently, until mixture is thick, rich, and not runny, 5 to 8 minutes. Serve with warm buns.
