Maggy’s Perfect Marinade
(Adapted from the BBC website) Enough for 2 pounds of chicken, beef, pork, lamb, or steaky fish.

Ingredients
- 3 tablespoons ketchup
- 2 tablespoons honey
- 2 tablespoons Thai chili (or chili garlic) sauce
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
- 1 teaspoon Cajun seasoning (or 5 Chinese Spice or 7 Thai Spice)
Instructions
- Mix all ingredients together; add meat and marinate long enough for flavors to blend, 15 minutes or overnight.

Maggy, I’ve used this marinade since you’ve posted it and I’ve gotten nothing but compliments! It’s really that good. We’ve been trying to eat less meat lately (as in fish weekly, but other meats once or twice a month unless we’re at someone’s house) so I was thinking about using it on frozen and thawed tofu. What do you think?
