Simple Garlic-Parsley Butter

Ingredients
- 1 stick (8 tablespoons) unsalted butter, softened
- 2 medium garlic cloves, minced
- ½ teaspoon kosher salt
- ½ teaspoon cracked black pepper
- ¼ cup chopped fresh parsley
Instructions
- Mix all ingredients in a medium bowl. Put garlic-parsley butter into a decorative dish and serve or spread over cooked meat.
- This butter can be spread on any grilled cut making it perfect for mixed grills. We used it on grilled chicken, lamb and steak, but it would also be delicious on fish.

I love making composite butters.. sometimes I will take a whole afternoon out to make a bunch of different varieties and then freeze them. Garlic and parsley is definitely one of my favorites, but any fresh herbs are great – I also really love honey and cinnamon for breakfast pastries.
Simple tricks like this, or like doing the same with homemade mayo, are some of my favorite things about cooking. The little details that make the big difference.

What timing! We *tried* to make a compound butter for some filets we grilled up last night. We used butter, gorgonzola cheese, salt, pepper, garlic, and some chilled grilled onions. The flavor was there but the butter & gorgonzola didn’t melt at the same speed so we ended up with melted butter and then put it under the broiler to melt the cheese. Trial & error in the kitchen is always an adventure!
