- 1 crusty Italian roll
- Pepper Jack cheese
- 2-3 strips bacon
- 2 eggs
- Pinch chipotle powder
- Salt and pepper
- Arugula
- Split the roll and put it under the broiler to toast. Cover one (or both) sides of the bun with Pepper Jack, and allow to melt. Meanwhile, fry the bacon until very crisp. Pour off excess fat, leaving enough in the pan to fry the eggs. Crack the eggs into the pan and sprinkle with salt, pepper, and a hefty pinch of chipotle powder. Fry eggs to desired doneness (I like mine a little runny).
- Layer the arugula, eggs, and bacon on the cheesy roll, add a dash of hot sauce if you'd like. Serve immediately.
