Overnight Oatmeal
Here’s the perfect solution for when you don’t have the drive to start from scratch. This recipe can easily be halved – use a small saucepan.

Ingredients
- 2 cups old-fashioned oats
- 1 quart light vanilla soy milk or 2 cups 2% milk mixed with 2 cups water
Instructions
- Adjust oven rack to lower-middle position and heat oven to 170 degrees.
- Mix oats, soy milk or milk and water, and salt in a large saucepan. Cover and set in oven until milk is absorbed and oatmeal is cooked, 4 hours minimum and up to 12 hours. Stir then dish up and add your favorite toppings. I love mixed dried fruit, glazed pecans (if you haven’t yet found these at your store, do!), and brown sugar.

Dried Blueberries really add some sweetness and tang (I know that sounds contradictory but its true)

Trying this tonight with steel cut oats (groats) …here is hoping it works…

I’ve been cooking my oatmeal with 1/2 soy milk and 1/2 water but I have to try all soy milk instead,like your recipe. It doesn’t seem to work as well as the 1/2 milk and 1/2 water that I use for my kids’ oatmeal.
