Today we’re throwing a virtual baby shower for our dear friend and fellow blogger, Lisa Thiele from With Style and Grace. Lisa and her husband are just weeks away from welcoming a baby boy into the world and we couldn’t be more excited for them.
Lisa is one of the warmest and most wonderful people I’ve ever met. When we met for the first time six months ago, we experienced the kind of immediate friendship that makes you feel you’ve known a person for years. She is unfailingly positive, overwhelmingly kind, and gently, but firmly honest. Her laughter is infectious, her smile is constant. And when I think of all these qualities she possesses, I know this baby could not be any more blessed to be born to such a mother.
So, Lisa, today I’m bringing my Mom’s Chocolate-Peanut Chex Mix to your shower. I really wish I were bringing it to you myself. If we were having an in-real-life-shower, I’d make it with gluten free pretzels and rice chex just for you! Enjoy this sweet treat, Lisa.
- 1 cup Chex cereal (variety, your choice)
- 1 cup bite-size pretzels
- ½ cup roasted peanuts (salted, optional)
- 1½ ounces bittersweet chocolate, melted.
- Toss cereal, pretzels, and peanuts with warm chocolate to evenly coat. Turn onto a parchment- or waxed-lined small baking sheet and spread in a more or less single layer. Refrigerate until set, about 10 minutes. Serve!

I love it! Sounds like the perfect snack, salty and sweet! When are we going to round everyone up for a real life party so we can eat all? We must work on that!

Ok. I know that chocolate can be finicky. Can you use melted chocolate chips for this recipe, or will the result not be what I’m looking for? What do you recommend? Thanks again for recipes that are de-lish and stories that I look forward to reading.

Oh man, I could totally go for some of this right now!
