I don’t know if it’s the double weather wammie we east coasters are still feeling, all the post-election jibber, or the cooler weather, but David and I have been hungrier these past few weeks. More than usual, we need treats! If you’re like us, we’ve found that Coconut Hot Chocolate warms the body and cheers weary spirits.
Consumed in moderation, dark chocolate is not only good for your body, it’s good for your mood, offering that much-needed energy boost when we start to lag. Add coconut drink to the equation (only 80 calories per cup) and you’ve got a pick-me-up that will warm the body and soothe the soul without packing on the pounds.
Do not confuse coconut drink with canned coconut milk or cream. Like other milks coconut drink is aseptically packaged and is commonly located in the non-dairy milk section.

- 2 cups coconut drink (such as Coconut Dream)
- 2 ounces bittersweet chocolate
- Pinch salt
- 1 teaspoon vanilla extract.
- Slowly bring coconut drink, chocolate, and salt to simmer in a medium saucepan, whisking to melt the chocolate. Remove from heat, stir in vanilla and serve.
