As a grad student, I’m not exactly rolling in the dough (unless you count bread dough). So, I eat pasta…a lot. But there are only so many times I can eat tomato sauce, no matter how fancy I make it. In this week’s USA Weekend column, I share my technique for making pasta with vegetables in a light, flavorful, wine and broth-based sauce. This is my absolute go-to formula for fast and fresh weeknight dinners. You can use any vegetables, any wine (or none), any broth, any herbs, and you can even add sausage, bacon, or chicken…they sky’s the limit. Just be sure to taste along the way, try new things, and trust your instincts!

Hi ladies..this recipe looks scrumptious! I also covet the Le Creuset pan and the salt container you were using….which Le Creuset pan is it, and where can an avid cook find the salt box? Thanks for a great blog and for years of cooking pleasure with my collection of Pam Anderson cookbooks.

Hey Sylvia,
The Le Creuset in the shot is what they call a risotto pan, and it’s my favorite because it’s a little wider and a little shallower than the Le Creuset Dutch ovens.
The cooking school, Cooks of Crocus Hill, gave me the salt box a few years back as a gift for teaching a cooking class. I checked to see if they had them on line, and I didn’t see them but you could always call the store and check.

Your frugal ways as a grad student will never leave you, I’m sorry to say. Even though I’ve been done for 2 years, I still eat like a poor student. When I buy fancy items at the grocery store, I feel guilty. But, if I’m cooking it for someone else and not just myself, I feel okay about it.
