I’m on vacation in Ponte Vedra, Florida this week. So many good things happened when we were here last year. We sunned and swam, ate and drank. The fruits of all that fun resulted in Three Many Cooks and Meatless Mondays (my book after next).
But last year I was ready for vacation. I had just turned in Perfect One-Dish Dinners and, with no immediate deadlines, I felt free to relax. This year’s different. There’s the blog we conceived last summer which needs loving attention everyday. Perfect One Dish Dinners is out soon and publicity is warming up. The deadline for Meatless Mondays—a mere twinkle in my eye last summer—is looming.
Not quite so free this summer, I made a (delusional) plan to “do a little work.” Not much—just test a few recipes, take a couple photos, do a little writing. Fortunately the sand between my toes and salt air in my lungs quickly brought me to my senses.
So I’m vacation this week. No story—just a quick recipe for homemade tortilla chips and Andy’s (my practically perfect son-in-law) guacamole which we enjoyed a couple of nights ago with margaritas (see The Back Story for the recipe), both of which are perfect for vacation or whenever you want that feeling
I’m trying to set a good example for the rest of you who haven’t gotten out of town yet this summer. It’s early. So close up the shop, pack a bag and hang that Gone Fishin’ sign on the door.

Message received, Mama. We’re headed to Texas for good food and family, waterparks and playing with the niece and nephew. The only thing that would make it better is if my East Coast family could meet my South Texan one. So glad you’re relaxing. You deserve it.

We are going to a beach condo in a week, and we can’t wait! We, too, had the most relaxing, awesome beach vacation last year and hope to duplicate it again! It’s great to see family and visit sites, but sometimes we just need a little time to refuel the soul. Enjoy your ocean therapy!
