Exactly one week from today—October 25—Cook without a Book: Meatless Meals is officially available. We’re celebrating its publication (and Meatless Mondays) today and next week with a giveaway and a recipe.
It wasn’t hard to decide this week’s recipe. On Saturday I attended Pie Party Live, a gathering of a scant one hundred food bloggers at Rodeo Bar and Grill in New York City. Entrance fee: one pie, savory or sweet. For a pie lover like me, it was heaven.
I checked the pre-party pie list and the bulk of offerings were sweet. Since the party started at noon, I took a savory turn making one of the vegetable galettes from Cook Without a Book: Meatless Meals.
It was a crisp fall day, and I had a head of cabbage in the vegetable bin and a butternut squash in the vegetable basket. I roasted them, along with an onion, to make Butternut Squash and Cabbage Galette. But as long as you’ve got pie dough you can make a galette whatever season you’re in with whatever vegetables you’ve got around.
It’s Monday, so let’s celebrate. In fact it’s the whole point of Cook Without a Book: Meatless Meals—to inspire us to eat less meat, better meat, and to help make our meatless days fun!
A couple of weeks ago I asked which meat or meaty dish would you have the most trouble giving up if you become vegetarian. I loved reading your responses! Bacon and burgers scored high.

Sweet, pumpkin pie would probably be my favorite. And I just made one this weekend. Unless cheesecake is considered a pie…. then that would probably be my favorite. 🙂
I have a new favorite, it’s this Butternut Squash and Cabbage Galette, my husbands too! Thanks for bringing this galette to pie to pie party – it was my favorite!
Sweet – I’ll say pumpkin or apple, or cheesecake. Also something with chocolate and raspberries. Savory – something with chicken and mushrooms.
I’ve got an apple pie in the freezer and looking forward to pumpkin pie for Thanksgiving!

Pecan Pie Cobbler – would that qualify as a pie? it has a two layer crust! and is to die for!
Sour Cream Lemon Pie….but sometimes I just LOVE the left over crust after making a pie.

I love cherry pie! Made with sour cherries from my husband’s grandmother’s tree. Of course now it has to be gluten free. I have yet to attempt it
I think mine would be a summer squash and ricotta galette. I also love apple pie!
