Irish Soda Bread

Serves: Makes one round loaf
Ingredients
- 3½ cups bleached all-purpose flour
- 1½ teaspoons salt
- 1½ teaspoons sugar
- ¾ teaspoon baking soda
- 1½ cups buttermilk
Instructions
- Adjust oven rack to lower-middle position and heat oven to 450 degrees. Mix flour, salt, sugar, and baking soda in a large, wide bowl for easy mixing. Add buttermilk and stir with a fork until dough resembles small tatters of cloth.
- Using hands, knead dough in bowl to quickly to form a rough 8-inch ball. Place dough on a small baking pan, slashing top with a cross or X. Bake until bread starts to turn golden, about 10 minutes. Reduce oven temperature to 400 degrees; continue to bake until bread is crisp and golden brown, about 35 minutes longer. Transfer to a wire rack, cool slightly.

Hi,
Just made this for the first time and it tastes fabulous! The outside became very crispy and tasted just like soda crackers! It didn’t look very much like other soda bread I have seen, though. I think mine turned out a bit drier-looking on the outside, like it still resembled the tattered cloth look that the dough had. Could you post a photo of yours? I have also had the heat on in my house (it is winter), so maybe the air is drier and dried out the bread. Is that possible?

D’oh! The photo just loaded. Must be my internet. Yes, mine looks like yours. Is it normal for it be so crisp on the outside and still doughy on the inside?
