This week I’m sharing an example of my creamy roasted vegetable soup; it’s the one I mentioned in The Perfect Wedding on Friday. This soup is nice enough to enjoy as a first course with company (or even as shooter appetizers as I did at the wedding!) and simple enough to pair with a sandwich or salad. I’ve known for a long time that roasting the vegetables for this style soup heightens flavor and in some of my earlier creamy vegetable soup formulas I’ve “roasted” them right in the soup kettle. It works but it takes a lot of time and attention and there’s only so much surface area in a pot. By roasting the vegetables in the oven, it saves time and allows you to roast a large quantity very simply.
This week I’m interested to see how you answer the following question: If you were contemplating a vegetarian lifestyle, which meaty dish you’d have hard time giving up. Having just visited my parents in Florida this weekend and enjoying sausages and biscuits for breakfast, I think I’d miss sausage.

I would miss my dads baby back ribs, and my hubbys awesome Korean shortribs!!
pulled pork. it’s the only meat i ever actually “miss” since going vegan earlier this year.
I would definitely miss Gumbo. All that sausage and chicken! Yum!!!
fillet Mignon. My favorite steak & sometimes a girl just needs a big hunk of meat!
I would definitely miss a good bolognese sauce. That is comfort food for me!
I really would miss a nice, thick filet mignon. That would be the most difficult to give up for me.
Oh…anything with pork in it…as I always say, “I could be a vegetarian if it weren’t for pork!”
A Thanksgiving turkey, for sure! I could definitely be a vegetarian (was basically a veggie in grad school), but something about that delicious smell of a roasting turkey in the oven…I don’t think I could resist!
It would have to be a big fat juicy steak.
I’m mostly vegetarian myself, but cook meat, poultry and fish for my family…..and just this week, we’ve enjoyed my “new” three favorites-roast chicken, mexican-style meatloaf with ground beef, and pork tenderloin. I think that I’d miss pork tenderloin the most……..
Sausage for me, too!
I think it would be filet mignon…though bacon would come in a close second.
I would miss having a big, juicy t-bone steak, cooked medium rare. I really am not much of a meat eater, but when I am craving beef, there is just no substitute for a nice steak.
It would be bacon for me. bacon just makes it better.
I would miss sauage and steak!
I’ve followed both vegetarian and vegan diets for a number of years and I missed all of it! But the one I most missed was good bacon. A tomato sandwich is great, but there’s nothing like a BLT.
The one meat I’d have a hard time giving up is pepperoni–can’t eat a pizza without it!

I would miss fish and seafood.
My husband and I both agreed: burgers. We eat higher quality meat less often, so we make a lot of no-meat or minimal-meat meals, but on those occasions when a craving does hit, a burger seems to satisfy 🙂
I don’t eat a lot of red meat but I think I’d really miss having a good, juicy cheeseburger. Though I like turkey burgers and veggie burgers,
I really crave a good burger occasionally.
Pizza with thinly sliced Italian sausage. It’s not pizza without it…
