I have searched my supermarket and health store and am having trouble tracking it down. I don’t want to give up and am am really looking forward to making this dish! A. Hominy is dried maize kernels and the canned version has been rehydrated. It’s very much like adding frozen or canned corn to a dish, but hominy is a larger kernel with a different flavor. If you’re interested in knowing more about hominy, I’d read its Wikipedia article.
If you haven’t had hominy before, I’d recommend trying to track it down. I tend to find hominy in the canned beans section of the store or in the Mexican food section. If you’re still having an impossible time, I would substitute with 3 cups of frozen corn.
