Simply put, I am obsessed with Mom’s Caesar salad recipe. I am so spoiled by her easy, homemade dressing–so light, lemony and delicious–that I won’t eat any other Caesar dressing! Adding boiled eggs and hash brown croutons seemed like an odd addition to me at first, but once I tried it…I was a believer! A salad for lunch that keeps me full all day, bring it on!

Mom’s Ceasar Salad – we have it at every birthday party because the birthday girl (or boy) always requests it. We loved this salad
when we were kids because we were allowed to eat those big pieces of romaine lettuce with our fingers. But now that I’m older, I know that this salad has it all – the dressing is creamy with a zing and the hash brown croutons and boiled eggs make it a hearty meal.

I agree with Sharon that this is the salad to eat on a daily basis. We in my family are also obsessed with it. We even have relatives invite us over to make it at their house. I love the idea of the croutons…but wonder, could they also be baked after being tossed with olive oil? That might be yummy too. I also like the idea that you don’t require that the croutons be made from scratch hash browns, the frozen ones are so convenient!

I love the hearty addition of potato to the main course salad idea.
But, why not cook those hash browns yourself?
Caesar dressing that begins with a mayonnaise base? Oh dear. I think I just threw up a little. Making caesar dressing from scratch isn’t difficult.
Seems less like cooking and more like defrosting.

WOW.. I made this salad this evening for dinner. WE LOVED IT! I had my doubts about the hash brown croutons… but they were fabulous in the salad as was the dressing. Easy peasy quick meal. Thanks for the recipe Three Many Cooks.. you rock!

Sounds delicious! I love boiled eggs. But just a quick note: Regular Worcestershire sauce (like the kind in the video, which looks like Lea & Perrins) isn’t vegetarian. It’s made with anchovies. Natural foods stores do sell vegetarian substitutes for it, but maybe a little soy sauce might work instead?

My family just enjoyed the dressing on one chopped head of iceberg with store brand croutons. Sacrilege, maybe, but lemony yum anyway!
