Q. Elaine Asks: I was looking at your recipe for stuffing in Perfect Recipes for Having People Over and wondered if you have ever made it gluten free? If so, what is the best kind of GF bread to use? Any other changes?
A. Hi Elaine, Since I’m not gluten-free I might not be the best person to ask about gluten-free stuffing. I don’t have bread suggestions–you might want to check with Shauna Ahern at Gluten-Free Girl. I’m sure she’s got thoughts on this subject. My experience with gluten-free bread is that it’s denser, so it may not absorb as much broth, so add it slowly as needed. I’m also thinking that once you add broth the bread might fall apart more easily, so make sure you toss it gently. In fact, you may want to place the bread mixture in your casserole and then add the broth-egg mixture. That way you can toss it right in the baking container. Good luck and Happy Thanksgiving.
