How many eggs do I need to bake Almond Biscotti?

Q.  Linda Asks: Good morning, Pam.  I’m looking over your recipe for biscotti (which is my son’s favorite!) and had a question.  You call for 4 eggs, 2 egg yolks, and 1 egg white for brushing.  Does this mean I need 7 eggs or 6?

A.  No Linda, It’s a little confusing. I’m calling for 4 eggs plus 2 yolks in the biscotti. Save one of the whites from the yolks and use that to brush the cookies before the first baking. And makes sure to watch our video. I think that’ll really clarify the process. Good luck!
