- 1 tablespoons olive oil
- 2 tablespoons steak sauce, such as A-1
- 1 tablespoon soy sauce
- 1 teaspoon each: garlic powder and paprika, and coarsely ground black pepper
- 1 rib-eye steak (about 1 pound and 1 inch thick)
- 1 large sweet onion, halved and sliced into thick wedges
- ½ of a 12-ounce jar fried peppers, oil drained and reserved
- Salt
- 4 hoagie rolls
- Olive oil and red wine vinegar for drizzling
- 4 slices provolone cheese, halved
- Mix oil, steak sauce, soy, garlic powder, paprika, and pepper in a small bowl. Place steak on a plate; prick all over on both sides with a fork. Spread half the marinade on one side; turn steak(s) over and repeat on remaining side; let stand while grill heats. (Can marinate at room temperature up to 2 hours or refrigerate overnight.)
- Place a large cast-iron or heavy ovenproof skillet on grill grate. Heat gas grill igniting all burners on high for at least 10 minutes. Clean portion of grate where steak will grill with a wire brush then lubricate with an oil-soaked rag.
- Toss onions with reserved fried pepper oil and sprinkle with salt.
- Add onions to skillet and place steak on hot rack; cover and grill until impressive grill marks form, about 4 minutes. Stir onions and turn steak; close lid and continue to grill until onions are tender and steak is cooked to desired doneness, 4 to 5 minutes longer for medium. Stir peppers into onions, remove steak from grill, let rest 5 minutes, and then slice thin. Reduce burners to low; add buns and grill until toasted and warmed through, 2 to 3 minutes.
- To assemble, drizzle each bun with a little olive oil and vinegar. Fill with a portion of steak and peppers and onions; top with cheese. Return sandwiches to warm grill; cover and continue to grill until cheese melts, a couple of minutes longer. Serve immediately.

Perhaps not the right place, but I want to say thank you for the spaghetti with grilled ratatouille recipe in Fine Cooking. I’ve made grilled veggies with pasta before, but this recipe is so much better. Making a sauce with the tomatoes, some of the olives and garlic was inspired. We just finished it for lunch and it was just as good leftover as it was fresh. It will be on the menu again soon.

I’m glad you enjoyed it, Nan. I think that pasta dish will be a regular at our summer dinner table as well.

I really want to try this recipe for my husband, but I have been unable to find a 12-ounce jar of FRIED peppers. I can find roasted red bell peppers, but nothing fried. Can you give me an idea of where to locate and what kind of peppers these are, if I need to substitute.
Thank you,
Pam says
Hey Donna,
Fried peppers are an antipasto and if your store has them, they should be in the Italian section. I hope you can find them!

Sending this to my husband right now. He’s our griller, but I still get to pick the recipes. 🙂 This looks delicious.

We tried the Philly cheese steak sandwiches for Father’s Day & they were outstanding! Did make a couple of changes, used fresh peppers & sautéed them with onions in EVOO; cut steak into strips & grilled on a basket. Used whole wheat buns. Served them with sweet potato medallions grilled on the foreman. We will definitely make these again! Next I would like to try the coconut cake for my B-day this wk.! Thank you for the great recipes!

This may be a stupid question but what are fried peppers? I made this the other night (delicious and a huge hit with my husband and boys)and used roasted red peppers. New to this website and love it so far!
Pam says
Hey Barb,
Not a crazy question at all. They’re are, in fact, fried peppers and they come in a jar and you usually find them in the Italian section of the grocery store with all the antipasti items. If you like it with roasted red peppers, perfect!

OK, guess I should’ve read all the comments from before 😀

Made these for dinner tonight with the (extremely) thin sliced round steak sold in our local stores. They were amazing. It was late when I made them, so I did all the cooking in a cast iron skillet on the stove. No matter that they were not grilled…..DELICIOUS. Thank you for a great recipe. It’s a keeper.
