It’s been cloudy and spitting rain all day. Just a few minutes ago the sun came out, and I looked back in my archives and found this Lemon Cooler Shot Glass Dessert that’s never been seen until now.
I’m down in Florida with my parents this Easter and we’ll be getting together with my two dearest cousins and the only aunt I have left on my mother’s side. They put me in charge of dessert. I think I just found it.
- 1 package (8 ounces) cream cheese
- ¼ cup confectioner’s sugar
- 2 teaspoon lemon zest, plus thin strips for garnish
- ½ cup plus 3 tablespoons lemon curd, separated
- ¾ cup heavy whipping cream
- 1½ cups graham crackers or crushed meringue
- Soften cream cheese in the microwave, about 30 seconds. In a medium bowl, combine cream cheese, confectioner’s sugar, and lemon zest. In a separate bowl whip cream and 3 tablespoons lemon curd to soft peaks.
- Layer the following in each shot glass: 1 tablespoon graham crackers (or meringue), 1 tablespoon cream cheese mixture, 2 teaspoons lemon curd, 1 tablespoon graham crackers, a dollop of whipped cream, and a thin strip of lemon zest. Refrigerate until ready to serve.
This looks so good! Like a little lemon pie in a glass. I can’t wait to try it out for after our egg hunt party.
oh yum! Easter sounds like a great time to give these a try. What do you do with the crushed meringue?
Hey Jen,
You can make these desserts with either graham cracker crumbs or crushed meringue cookies and have updated the recipe to reflect it. Either way, enjoy!
I love these shot glass desserts. It’s a mouthful of sweet goodness, without the calories and guilt of an entire piece of pie. Genius!
My mom used to make a layered dessert with jello and whipped cream. Definitely not as complicated and tasty as your shooter, but since my childhood, I have always adored layered desserts because of my fond jello and whipped cream memories. Thansk for the stroll down memory lane and your recipe is gorgeous and I bet it tastes great!
So adorable. And easy. I can see these in 4 ounce jars…of which I currently have an excess of. So maybe the coworkers will be seeing these treats soon.
Awesome, will have to try both ways 🙂
My husband loooooooves lemon desserts! This looks like a fabulously simple way to give him his lemon fix!
Thanks for the great idea, Pam. Happy Spring!
This looks excellent! I think I will make it for Easter. Have a great visit with your parents and relatives!
And I thank you for finding it because I was searching for a “limoncello” type mini dessert for Easter.
These are so pretty, but so easy!
Can these be made a day ahead?
Yes they can, Rosa. Sorry we’re a little behind on our reply. Have a lovely holiday!
what size of shot glasses did you useÉ Thanks
