- 2 pints fresh strawberries, stemmed, and rinsed and sliced
- ⅓ cup granulated sugar
- 1 tablespoon cornstarch
- Salt
- 1 teaspoon vanilla extract
- ½ cup all-purpose flour
- ½ cup old-fashioned oatmeal
- 6 tablespoons light brown sugar
- 4 tablespoons butter, melted
- Adjust oven rack lower-middle position and heat oven to 375 degrees.
- Toss strawberries with sugar, cornstarch, pinch of salt, and vanilla; turn into an 8-inch square baking pan.
- Mix flour, oatmeal, brown sugar, and another pinch of salt in a medium bowl. Stir in melted butter with a fork until well mixed and clumps form. Distribute evenly over strawberries.
- Bake until crumble is golden and strawberries are bubbly hot, 30 to 35 minutes.

What a perfect way to use up all the extra strawberries flooding the market these days! Florida and California strawberry harvests coincided this season due to weather, so the market is saturated which means low prices on juicy berries. Yay!

Made this for church potluck, and it was a big hit. I was a little short on strawberries, so I threw in some thawed blueberries I’d had sitting in the freezer. Yum! Only thing missing was the ice cream!
