With the October 25th publication date of Cook without a Book: Meatless Meals just weeks away, we’re starting to celebrate. Every Monday between now and then we’ll be featuring a meatless recipe and giving away copy of Cook Without a Book: Meatless Meals.
Since today’s recipe is Egg Wrap-and-Runs with Mushrooms and Provolone, tell us your favorite meatless breakfast. Although I love these wrap and runs and enjoy them regularly (for lunch too), I’d have to say my very favorite weekday breakfast is quick cheesy grits.

My ritual breakfast is sprouted wheat toast, buttered, and chocolate milk made with cocoa and agave. I don’t think I even have a favorite meatful breakfast. Pancakes, waffles, muffins, toast – all whole-grain – are my go-to. The cookbook looks wonderful. Can’t wait to get a copy.

My favorite breakfast: whole grain toast drizzled with a little olive oil, topped with sliced tomato (preferably heirloom), kosher salt and black pepper. If I’m feeling decadent, I might add sliced avocado too. Yum! I eat it every day when tomatoes are in season!

most of our meals are meatless but we’re not necessarily vegetarians, we just prefer to eat lots of veggies; egg dishes are mostly filled w/veg, whole grain pancakes/waffles, whole grain muffins make an appearance too. but our standard breakfast is a green drink blended with kale, baby bok choy, celery, English cucumber, lemon, pinch of salt and a splash of orange juice – add a slice of whole grain toast and we’re good to go . . . can’t wait to get my hands on this new one Pam – have really enjoyed the one-pot meals!

I used to be a vegetarian, but have started to incorporate a little bit of meat back because I just got married and my husband is a meat and potatoes kind of guy! But when I’m running out the door in the morning, I like to have a corn tortilla with a scrambled egg, spinach, and a sprinkling of aged white cheddar cheese. And on weekends, when we have a bit more time to cook together, it’s a simple pancake breakfast 🙂

Can’t pick just one! Depending on what’s in the fridge and amount of time:
(1) steel cut oatmeal with raisins, chopped walnuts and skim milk
(2) greek yogurt with chopped walnuts anddried cranberries (or a local honey)
(3) ricotta pancakes with lemon curd (weekend treat)

weekday mornings it’s granola and fruit with almond milk and then i’ll usually whip up something more exciting on the weekends. pancakes, crepes, hash browns, etc. i’ve actually been eating vegan since february and breakfast is particularly difficult without eggs. i’ve had a ton of fun learning, though. it’s like i’m learning how to cook all over again! 🙂
