Since today’s recipe is Egg Wrap-and-Runs with Mushrooms and Provolone, tell us your favorite meatless breakfast. Although I love these wrap and runs and enjoy them regularly (for lunch too), I’d have to say my very favorite weekday breakfast is quick cheesy grits.

My favorite meatless breakfast is homemade granola with fresh fruit on top.
I love oats. I make oatmeal most mornings and top it with lots of different things depending on the season.
My goto breakfast is indeed meatless – home made yogurt, granola and either fresh fruit or home made jam, depending on the season. I look forward to seeing more of your recipes!
Yogurt Parfait made with homemade granola (so I can load it up, not just a little sprinkle) and fresh strawberries!

Favorite meatless breakfast, yogurt and granola with a piece of fresh fruit I eat it EVERY weekday morning!
My ritual breakfast is sprouted wheat toast, buttered, and chocolate milk made with cocoa and agave. I don’t think I even have a favorite meatful breakfast. Pancakes, waffles, muffins, toast – all whole-grain – are my go-to. The cookbook looks wonderful. Can’t wait to get a copy.
Oatmeal with brown sugar, walnuts, apples and toast with homemade strawberry jam
Steel cut oatmeal is a favorite around here, as is homemade granola and yogurt. On the weekends I love making Sweet Potato Hash or Tomato Hash. We are striving to go meatless four days a week, so your new book is very timely for us.
buttermilk pancakes with syrup, and fresh fruit. Oh-so-good.
Pumpkin pie spice pancakes, for sure!!! Runner up is a yogurt/fresh fruit parfait.
Congrats on your cookbook! I hope you will visit Southern Season again (Chapel Hill). My favorite breakfast would be breakfast burritos — filled with eggs, cheese, salsa, and veges. Yum! Especially good when camping.
Most of my breakfasts are meatless, but my favourite is probably Swiss muesli.

Granola! I make it in huge batches about once a month. I love it as a before-bed snack too.

My favorite breakfast: whole grain toast drizzled with a little olive oil, topped with sliced tomato (preferably heirloom), kosher salt and black pepper. If I’m feeling decadent, I might add sliced avocado too. Yum! I eat it every day when tomatoes are in season!

most of our meals are meatless but we’re not necessarily vegetarians, we just prefer to eat lots of veggies; egg dishes are mostly filled w/veg, whole grain pancakes/waffles, whole grain muffins make an appearance too. but our standard breakfast is a green drink blended with kale, baby bok choy, celery, English cucumber, lemon, pinch of salt and a splash of orange juice – add a slice of whole grain toast and we’re good to go . . . can’t wait to get my hands on this new one Pam – have really enjoyed the one-pot meals!
The best one I know of is left over cheese enchiladas smothered with New Mexican red chile sauce, and two fried eggs. Hey, I think I’ll go make some cheese enchiladas now.
Yogurt and Granola
I used to be a vegetarian, but have started to incorporate a little bit of meat back because I just got married and my husband is a meat and potatoes kind of guy! But when I’m running out the door in the morning, I like to have a corn tortilla with a scrambled egg, spinach, and a sprinkling of aged white cheddar cheese. And on weekends, when we have a bit more time to cook together, it’s a simple pancake breakfast 🙂

My favorite breakfast is plain Greek yogurt with homemade olive oil granola and a small spoon of lemon curd. Sometimes I sprinkle on fresh native strawberries or blueberries.
My husband and I try to cook meatless at least once a week. Truthfully omelets , veggies, sometimes a little cheese are part of the menu, Would like to broaden our horizons a little so your new book will definitely be on my bookshelf whether I win or not. Thank you for having the giveaway! Steph
Can’t pick just one! Depending on what’s in the fridge and amount of time:
(1) steel cut oatmeal with raisins, chopped walnuts and skim milk
(2) greek yogurt with chopped walnuts anddried cranberries (or a local honey)
(3) ricotta pancakes with lemon curd (weekend treat)

weekday mornings it’s granola and fruit with almond milk and then i’ll usually whip up something more exciting on the weekends. pancakes, crepes, hash browns, etc. i’ve actually been eating vegan since february and breakfast is particularly difficult without eggs. i’ve had a ton of fun learning, though. it’s like i’m learning how to cook all over again! 🙂

we eat a LOT of banana pancakes with strawberries on the side in this house. My 3 year old loves them and asks for them frequently.

We do meatless Egg McMuffins — english muffin, sliced hardboiled egg, and a slice of cheese. Yummy!
