With the October 25th publication date of Cook without a Book: Meatless Meals just weeks away, we’re starting to celebrate. Every Monday between now and then we’ll be featuring a meatless recipe and giving away copy of Cook Without a Book: Meatless Meals.
Since today’s recipe is Egg Wrap-and-Runs with Mushrooms and Provolone, tell us your favorite meatless breakfast. Although I love these wrap and runs and enjoy them regularly (for lunch too), I’d have to say my very favorite weekday breakfast is quick cheesy grits.

My favorite is “Egg-in-a-Hole” – take a piece of bread, cut out a hole in the middle, and crack the egg in the hole! Make sure the yoke is runny – yum!

Tough choice, but I think buckwheat pancakes with fresh fruit, a drizzle of maple syrup, and a side of eggs scrambled with feta, onion and tomato – I guess that’s technically brunch, but it’s still a favorite. Then I can have leftover pancakes as an afternoon treat, as I just did, with Nutella and sliced banana. 🙂

My favorite breakfast has to be gluten free and vegetarian with enough protein. So I love Bob’s Red Mill “Mighty Tasty Hot Cereal” with blueberries and a few nuts. I eat 2 servings that gives me 8g of protein and 8 g of fiber . YUM

Personally, I prefer a sweet breakfast most of the time. I usually have oatmeal, with cinnamon and raisins. Though if I’m in the mood for salty, I make a breakfast burrito: 1 scrambled egg, a spoonful of fat free refried beans, a heaping portion of pico de gallo, and some sriracha.

In the summer — fresh peach crumble. It’s my family’s favorite weekend treat!! And come winter, oatmeal apple crisp (though this year we’ll be having peach crumble, too, thanks to Pam’s freezer peaches post!!!

I like a touch of sweet and a touch of savory… my usual breakfast is plain greek yogurt with a dab of honey and berries, mango, pineapple- either fresh or frozen depending on the season- and a slice of whole grain toast spread with kalamata olive tapenade!

I’m not to exciting, but I like just plain old scrambled eggs, and toast. Usually I have a granola bar during the week while I’m running out the door to work, and scrambled eggs on the week-end is a treat.

Well it’s an omelet kinda thing.
Potatoes, onions, garlic, cheese, etc. add eggs. finish in the oven. plate and enjoy with maybe a salad and glass of wine.

Scrambled eggs with fresh salsa (heirloom tomatoes, onions, cilantro, sant amounts of garlic and green pepper) and sliced avocado. Some days a slice of raisin toast hits the spot; other days, if the avocados are “perfect” no need for the bread ~ the eggs and salsa and avocado are filling and satisfying

Nearly every morning, I have homemade goat’s milk yogurt with frozen wild blueberries, sometimes with a little honey if the whole business is a touch too tart. It takes on a smoothie consistency when mixed, which is very welcome during the height of summer.

I love it when my husband makes me crema de maiz, a classic Puerto Rican breakfast. It’s basically a hot cereal made out of coarse cornmeal, milk, sugar, nutmeg, vanilla extract and an egg. It is so delicious and filling.

Saute chopped onion and jalapeno in olive oil, add grated tomato and simmer for a moment. Add beaten eggs, salt & pepper, cook for a moment, then serve with warmed corn or flour tortillas.

My favorite is the classic Filipino breakfast: Sinangag (Garlic Fried Rice), Salted Duck Eggs, Chopped Tomatoes and Tinapa (Smoked Fish), and some Pan de Sal (Filipino bread buns) with Quesong Puti (white cheese, somewhat like Feta cheese) . Wash it all down with a good, strong cup of coffee and a fresh,golden ripe Mango.

My favorite is the classic Huevos Rancheros. I make a slightly healthier take when I can, but eggs, black beans, tortillas, onion, tomato, salsa, cheese, hot sauce and sour cream can’t be beat. I also add some avocado as well for some healthy fats and creaminess.

I usually eat oatmeal for breakfast. I make a batch of steel cut oats on Sunday and just scoop out a serving everyday. That way I can customize it with dried or frozen fruit, jams, or my favorite for this time of year, pumpkin, walnuts and maple syrup!
