Q. Nancy Asks: I just got your One Dish Diners book and have been trying out some of the recipes. Love the Doable Paella and the Cassoulet Sausages with Beans – yum! My question is if my roasting pan can be used on my electric range stove. One roaster is the Back and White Speckled Aluminum Roaster and the other is a KitchenAid Stainless Steel Roaster. Are these safe to use on the stove top? I’d love to use them for the Meatballs and the Lamb Shanks with Beans recipes.
A. Great to hear from you and glad to hear you’re enjoying Perfect One-Dish Dinners. Your question about roasting pans… I don’t think I’d try it with the Black and White Speckled Roaster. If it’s what I’m thinking about, it’s probably going to be too thin (although I’ve been known to cook stovetop in large disposable pans when cooking for a crowd at my husband’s family reunions). The KitchenAid Stainless Steel Roaster sounds like a possibility. It just needs to be heavy-bottomed and large enough to cover two burners. Good Luck!
